Sauerkraut Salad

Drain 800g of Lewis Mountain Sauerkraut (make sure sauerkraut in fairly dry, no drips), use chopped style sauerkraut or use knife to chop shredded sauerkraut.
1 Medium Chopped Onion
½ Green Pepper Chopped
1 Large Tart Cooking Apple (Granny Smith) Peeled and Grated
1/2 Cup Granulated Sugar

You can also add 1 cup of chopped celery and 4 oz (114 ml) of chopped pimiento. We prefer not to add these. Combine all 5 ingredients in a large bowl. Chill for 24 hours to blend flavors. You can store in an airtight container in refrigerator for about 1 month. Makes about 4 cups (1L)

½ cup (125mL): 124 calories, .3g total fat, 600mg sodium, 2 g protein, 31 g carbohydrate, 4 g dietary Fiber.

Chocolate Sauerkraut Cake

¾ cup sauerkraut drained and chopped
1 ½ cups sugar
½ cup butter
3 eggs
1 tsp. pure vanilla
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 cup water
½ cup unsweetened cocoa powder

Preheat oven to 350 degrees

  1. Sift all dry ingredients together. Cream sugar, butter and vanilla. Beat eggs in one at a time.
  2. Add dry ingredients to creamed mixture alternately with water.
  3. Add sauerkraut mix thoroughly.
  4. Pour into greased pan.
  5. Bake 30 to 40 minutes until cake tests done.

Country Ribs and Kraut

2 Lbs. country style pork ribs
4 cups sauerkraut
1 cups unsweetened applesauce
2 tbs. packed brown sugar
1 tsp. garlic powder

  1. Place ribs in a shallow roasting pan meaty side down.
    Roast 20 minutes in a 450-degree oven.
  2. Reduce oven temp to 250 degrees.
  3. Combine remaining ingredients and arrange over ribs.
    Ribs are now meaty side up.
  4. Cover and bake until meat is tender and done. 1 to 2 hours.

Layered Ruben Spread

Over 350 Bake 25 minutes

2/3 cup mayo
1/3 cup 1000 island dressing
½ cup chopped sauerkraut, drained
2 cups shredded Swiss cheese
2 tbls. Green onion, chopped
6 oz. pastrami cut in small pieces

In ungreased pan, layer as follows:

All of the Sauerkraut
Half of cheese
Half of meat
Half of mayo
Rest of the meat

Mix other half of cheese with other half of mayo and green onions and spread over all. Bake 25 minutes. Serve with crackers and a spreading knife.

Note: I don't always have Swiss cheese in the house, so sometimes substitute with plain grated cheddar or Tex-mex mixture (whatever is handy at the time).

Sauerkraut & Canadian bacon Pizza

10 oz sauerkraut drained.
1 pkg Canadian Style bacon slices
14 oz shredded Mozzarella
1 cheese bread pizza crust
6-8 oz pizza or spaghetti sauce

  1. It's very simple.
  2. Start with the pizza crust and layer with sauce. ½ cheese, kraut, bacon, and remaining cheese.
  3. Pop in pre-heated oven 375degrees F until the cheese is fully melted.

Prep time 15 min.
Cook time 12-20 min.

For Kraut lovers "pile it on"

Pork Chops with Sauerkraut

Brown pork chops both sides do not cook completely. Place layer of sauerkraut in a casserole dish, layer pork chops, and top up with layer of sauerkraut. Make sure you add juice and you can use either Lewis Mountain chopped or shredded sauerkraut. Bake in oven at 350 for 1.5 – 2 hours. Check periodically to savor the aroma and flavor. You can use a less tender cut of pork as the sauerkraut tenderizes the meat. Serve with potatoes and green garden fresh veggies. This is one of our favorites.

Ruben Meatloaf

  • 1 LB EACH GROUD PORK, BEEF
  • 1 1/2 CUPS BREAD CRUMBS
  • 1/2 CUP ONIONS
  • 1 EGG
  • 1/4 CUP MAYONNAISE
  • 1/4 CUP KETCHUP
  • 1 TBSP WORCHESTER SAUCE
  • SALT
  • 2 CUPS DRAINED LEWIS MOUNTAIN SAUERKRAUT
  • 3/4 CUP SHREDDED CHEESE

Sauce

1/2 CUP KETCHUP
1 TBSP BROWN SUGAR
1 TBSP CIDER VINEGAR

Mix well. Pack ½ in round casserole dish. Layer with sauerkraut and shredded cheese on top. Cover with remaining meat. Cover with foil. Bake at 375 for 45 min. Add sauce. Bake ½ hour uncovered.
