Sauerkraut has many natural health benefits, some as a result of it's ingredients but most are a result of the lactic acid fermentation that turns the cabbage into sauerkraut.

Digestive system: as a cruciferous vegetable sauerkraut is proven to help lower the risk of colon cancer. Sauerkraut also contains many probiotic bacteria which develop through the fermentation process. These bacteria, including Lactobacillus acidophilus create lactic acid which gives the sauerkraut its sour flavor. Lactobacillus acidophilus is found naturally in our digestive tract, by eating sauerkraut it can restore healthy bacteria killed by antibiotics and can help maintain a healthy digestive system. Without these bacteria our colons would not maintain the acidity required to prevent the growth of cholera, typhoid and Candida yeast.

Heart: Sauerkraut contains flavinoids which are reported by the American Heart Association's Nutrition Committee to help lower cholesterol and reduce heart disease.

Immune system: Sauerkraut contains phytochemicals which are created during the fermentation process. These naturally occurring, beneficial byproducts of non-pasteurized sauerkraut can help boost the immune system.

Cancer: Sauerkraut contains a compound known as isothiocyanates. This compound is a known cancer preventing agent.

Nervous system: Acetylcholine found in sauerkraut is a neurotransmitter that leads to a more restful state of mind, a drop in blood pressure, a lower heart rate and improved sleep patterns.
